bean and millet salad

simple. fast. healthy. adapted very slightly from here.

what ya need:

1 c millet
3 c water
all of the following, chopped: tomato, red bell pepper, onion. cucumber if you want.
1-2 cloves garlic, minced or crushed
balsamic vinegar
lemon/lime juice
cumin
chili pepper/cayenne
salt & pepper
1-2 cans kidney beans or black beans

how ya do it:

-cook the millet - i did it somewhat haphazardly - let it come to a boil, then turned down heat, cooked covered.
-while the millet's cooking - mix together rest of the ingredients. add the millet once it's ready. if you're a purist you probably want to make the dressing (vinegar, lime/lemon, spices) separately and pour it over the millet, beans and vegetables.
-let cool & refrigerate. or just eat. serving options: on its own, in a pita (wrap), on a lettuce leaf...

I was meaning to ask you about this recipe one of these days :) btw thank you for all your helpful comments re school stress. how is everything on your end? i will give you a call soon as soon as i get over stuff due on mon!
