easy as pie...

This was quite easily the easiest pie I've ever made! Recipe found through Post Punk Kitchen (but I think it's a standard vegan dessert...):

you need:

1 pkg soft (silken) tofu
1 pkg chocolate chips
1 tsp vanilla
1 ready made graham cracker crust OR 1 1/4 c graham cracker crumbs, 1/4 c sugar, 1/3 c butter/margarine, melted

If you don't have the ready made crust, work on that first. Preheat the oven to 375F. Mix together the crumbs, sugar and butter/margarine. Then press the mixture down into a 9-inch pie plate (or a 6-inch one plus a little itty bitty 3 inch one, like I did). Stick it in the oven for 6-8 min.

Work on the filling next. Over the stovetop on low heat, melt about 3/4 of the chocolate chips. Stir frequently to keep them from burning. Set aside.

Blend the tofu + vanilla till smooth. Add the melted chocolate and blend some more (until smooth). Then stir in the remaining chocolate chips.

Pour the filling into the graham cracker crust. Leave it in the fridge for a few hours to set, and voila! A delicious chocolate pie!

(You could also give the flavour some kick by adding berries, or bananas, or using different flavoured chocolate chips).
