Spinach Salad on a Shoestring
I made this dish a couple weeks ago. It's super easy, and tastes really good. I used to make this using grapefruit & walnuts (I picked it up from someone, can't remember who), but orange & peanuts are MUCH cheaper. And I actually like the orange taste better in this than the grapefruit.
1. Wash spinach using a drainer. It's essential to use a drainer so that the spinach doesn't get wilted too fast.
2. Find a nice, sweet orange and cut into quarters; set aside. You could also use grapefruit, or any other citrus, I guess, for a different flavour. I like a sweet citrus cuz it takes away from the bitterness of the spinach.
3. Make the vinaigrette: there are tons of variations, but I used balsamic vinegar, olive oil, minced garlic, salt, pepper & cumin (mmm...cumin). Mix it all together & shake it up. Add it to the spinach gradually, tossing as you do so.
4. Squeeze the orange's juice into the salad, and keep tossing. I like to leave the orange pieces in cuz it looks pretty, and tastes good. NB: You could also just use ready-made orange juice.
5. Add the nuts & shake it all up! I was cheap & I used peanuts. They were raw & unsalted peanuts, which worked really well (I thought). You can also use walnuts, or pine nuts, or probably another unsalted, unroasted nut.

wow, looks like lintil, sharmalade and been are all pretty much online @ the same time. too bad we're not tech savvy and aren't on msn.
i'm not a person who fills up on salads, so i also made a lintil stew.
oh, and i got the bunch of spinach with stems attached. i've used the cello bag in the past too, though!
